Hey Jon.. Not sure if your still interested. But I will find you what your needing.. I am very sorry. Have been without internet for some time now. Every thing seems to be falling back into place.. Now back to business. It may take me a few days to get all the info needed.
The biggest problem i forsee is enzymes to convert the starches.. If I am not mistaking we'll need a few special ones.

I'm kinda in the same boat. execpt I have been trying to use kudzu rather than cat tails.. (since there is a overwhelming stock pile of kudzu here in the states..) Either way,. I know a few people whom know a few.. So i will try and post a soild recipe asap.. thanks.. and sorry again for the extended delay,,

It is my understanding that boiling the cattail rhizomes for about an hour will break down the starches. Then allow the temperature to drop to between 70 - 90 and add the yeast. That sounds like ambient for around here in southeast Texas. Let the yeast do its work and you should have beer between 13 - 15 % alcohol.

It is my understanding that enzymes are necessary if I were trying to convert the tops (cellulos).

I predicate all this with I don't know what I'm talking about!

Anyway I would like a step by step formula/proceedure to convert cattail rhizomes to alcohol.
